This Month's Recipe!

Hi Everybody,

Thanks for visiting my web site. We hope your visit will be enjoyable and that you will return often.

Changes and new venues are being added continually. You must drop by often and check for yourself.

Each month we offer a new recipe. These recipes will either be from my kitchen or from kitchens of personal friends of mine. They are "favorite" recipes and they utilize everyday ingredients.

Ok - I am B-A-D at getting new recipies on in a timely manner.  This one was in my recent newsletter.  I think it sounds awesome - a dessert or a brunch-type feature?  Or it sounds perfect for those house-parties....Cabi, Tupperware, Lia Sophia, etc.

BLUEBERRY CHEESE STRATA


6 slices bread, cubed and divided
2 cups frozen blueberries
1/3 cup sugar
1 cup lowfat Swiss cheese, shredded
2 cups lowfat milk
1 tsp. vanilla
1/4 tsp. salt
1/2 tsp. ground cinnamon
Vanilla yogurt or dairy sour crean
6 mint springs

Layer half of bread cubes, blueberries, sugar, cheese and remaining bread cubes in buttered 8-inch square baking dish.  In a medium bowl, combine eggs, milk vanilla and salt; mix well.  Pour mixture over bread; sprinkle with cinnamon.  Cover and refrigerate 6-24 hours.  Uncover and bake at 325 degrees for 50-60 minutes or until knife blade inseerted near center comes out clean.  Let stand 10 minutes before serving.  Top with yogurt or sour cream; garnish with mint.

Makes 6 servings
